Spinach and Cheese Mini Breakfast Bakes

Mix together spinach, cottage cheese, Parmesan cheese and cheddar cheese in medium bowl. In separate bowl, combine eggs, egg whites, milk, cumin, and pepper then mix with spinach and cheese mixture. Stir in cilantro. Spoon into 12 oiled 2- ½ inch muffin cups and bake at 375 degrees for 20–25 minutes. Remove from muffin cups and serve warm with salsa, if desired.

Orange-Herbed Pork Roast Recipe

Trim fat from pork roast. If necessary, cut roast to fit into crock pot. Combine garlic powder, ginger, thyme & pepper. Rub spice mixture over entire surface of meat with your fingers. In a large skillet, brown roast in hot oil. Drain.
